Our Whole King Alaskan Salmon is flown in every week from Alaska. The Salmon is filleted and placed in a our brine overnight. From here it is placed in our commercial smoker where it is smoked over Alder wood for 3 and a half hours. Alder is the "go-to wood" for salmon. We will keep with its tradition.
